Eat

As my husband and I get a little older, we have decided that maybe we should try to eat just a little better. I have been searching for (and trying) a few recipes here and there in order to give us a little more variety while attempting to keep it reasonably healthy. This section contains a few recipes that I have tried so far, and what I think of them. Maybe you will like them too. P.S. Not everything on here is going to be healthy


Chicken
Chicken Paillards with Herb-Tomato Salad
I liked this recipe, because it was fairly simple to make, and I got to beat something with a mallet. I think next time I will add just a smidge more salt, and a little less of the herbs. The flavor was a little too herb heavy for me.


Muffins
Healthier Chocolate-Chocolate Chip Muffins
If you are used to eating muffins that come straight out of a package these ones may taste a little bland at first, but they aren't half bad. You can always bump up the sweet by doubling up on the chocolate chips or adding a little more sugar.

Healthier Pumpkin Muffins
These muffins are fabulous just the way they are. They have quite a bit of flavor due to the pumpkin and the spice. They are also very moist. I omitted the raisins when I made them. I have to say that I love these pumpkin muffins


Cookies
Best Rolled Sugar Cookies
Okay, I know these aren't exactly "healthy", but I needed a recipe for the holidays, and these were very good! I used half whole wheat flour and half regular white flour though (because I ran out of white flour). Even with the wheat flour added, these cookies were still very, very good with blue royal icing on top (we made snowflakes).


Desserts
Cheesecake Stuffed Strawberries
So far, I can fool myself into believing that I am eating something healthy when I consume chocolate covered strawberries. Somehow, I don't think that will work with these. I haven't tried them, but can only imagine!
